Time for another Sunday Coffee Date post! These are some of my favorite posts to write, because I can just imagine sitting down with a mug of coffee and talking about anything and everything with all my blogging friends 😊
I know it’s Saturday, but I just had to post today because it has been a while and I miss this space!

If we were having coffee right now… I would tell you that I’ve been an absentee blogger lately! Summertime fun, my Etsy shop, and just life in general have kept me so busy that I haven’t had much time to check in here. Sad!! I’m hoping things slow down a little so I can get back to this space more often because I love it so, so much.
If we were having coffee right now… I would tell you that I’ve been spending a lot of time in the kitchen baking, baking, and baking some more!

If we were having coffee right now… I would ask you how your summer is going. I can’t believe it’s mid-August! I keep seeing back to school sales at stores, blog posts about kids going back to school, etc. and it just blows my mind how quickly summer goes each year.
I’ve been starting to think about getting Sadie’s homeschool curriculum together for the year and while I’m sad to see summer winding down, I do love fresh school supplies and workbooks 😂
If we were having coffee right now… I would tell you that our garden is in full swing and we can hardly keep up with the tomatoes! I’ve made salsa, pasta sauce, homemade ketchup, aaaand I’m staring at a another colander full of tomatoes as I type this post. Not mad about it though 🤷♀️ 😏
The best thing I’ve made from the garden this year has been a zucchini ribbon salad. I just peel zucchini into ribbons, chop tomatoes, dice a little bit of red onion, and toss it all together with salt, pepper, olive oil, and a squeeze of lemon juice. It’s so refreshing, quick to throw together, and doesn’t require any actual cooking!

If we were having coffee right now… I would tell you that we had another husky party at our house! I think we had about eight fluff balls running around at one point and then it stormed so some people left. A few people stayed and came inside and we had wet huskies running around and eating Frosty Paws and it was the best!
I’m hoping we can have another get together soon because they’re so. much. fun.

If we were having coffee right now… I would tell you that I can’t believe Sadie is almost three-years-old. I feel like I was *just* anxiously awaiting her arrival and then I blinked and she’s suddenly this amazing little kid running around bringing joy and laughter everywhere she goes.
I will say that while I’m feeling bittersweet about her growing up, I’m super excited to plan her birthday party! She requested a Minnie Mouse party this year so I’ve been dreaming up cake/cupcake ideas based off of that 😍

If we were having coffee right now… I would share something I read that really made an impact on me. It went something like this:
“Ships don’t sink because of the water around them. Ships sink because of the water that gets in them. Don’t let what’s happening around you get inside you and weigh you down.” A scripture that goes along with it is Isaiah 43:2.
Okay, I am off to drop Sadie off at my in-laws to play for the morning, run an Etsy order to the post office, and do some food prep for a cookout we’re having tonight!
It’s so weird because to me it feels like summer is just starting! Maybe it’s because I’m finally taking a vacation—spending time with family in Texas through the end of the months basically!

It feels like summer is winding down here. We had a few weeks of sunny weather but there’s a definite chill in the mornings now! September is usually a nice month here, so hopefully it will warm up again. I enjoy autumn and the ‘back to school’ time though — planning to get myself some new stationery and notebooks for the new semester 🙂

I cannot believe it’s mid-August either! This whole year flew faster than most. Your produce from the garden looks fresh as can be! YUM! How is Sadie almost three?!? A Minnie Mouse party is adorable- can’t wait to hear all about it & see your creations!
