Double Chocolate Cookies

1 12-ounce bag semi-sweet chocolate chips, divided
1 1/2 cups granulated sugar
1 cup unsalted butter, softened
2 teaspoons vanilla
2 large eggs
2 cups all-purpose flour
1/3 cup cocoa powder
1 tsp. baking soda
1/2 teaspoon salt

1. Preheat oven to 375°F.
2. Heat 1/2 cup chocolate chips in microwave-safe bowl 30 seconds or until melted. Stir, set aside to cool.
3. Beat sugar, butter, and vanilla on medium speed until creamy. Beat in eggs until light and fluffy. Mix in cooled melted chocolate.
4. Mix in flour, cocoa, baking soda, and salt on low speed until well blended. Stir in chocolate chips. Shape dough into 1-1/4 inch balls. Place 2-inches apart on ungreased cookie sheets.
5. Bake 9 to 11 minutes or until set and just beginning to crack on surface. Cool on cookie sheet 2 minutes; remove to wire racks to cool.
