Ingredients
2 tablespoons olive oil
1 onion, chopped
4 stalks celery, chopped
3 carrots, sliced
6 cups chicken broth
2 cups cooked turkey breast
Directions
1. Heat olive oil to medium high in a large soup pot and saute the vegetables until soft, about 10 minutes. Add pinch of salt and pepper.
2. Pour broth into pan and add turkey. Bring to a boil, cover, and simmer for 1 hour.
