Easy Strawberry Rhubarb Pie

Easy Strawberry Rhubarb Pie

Ingredients

Pie Crust

1 recipe double pie crust (or 2 store-bought crusts)

Strawberry rhubarb pie filling

Filling

3 cups chopped rhubarb (½-inch pieces)
3 cups sliced fresh strawberries
1 cup granulated sugar
⅓ cup cornstarch
1 tablespoon lemon juice
¼ teaspoon salt

Egg Wash

1 egg
Coarse sugar for sprinkling

Directions

1. Preheat the oven to 425°F. Roll out one pie crust and fit it into a 9-inch pie plate.
2. In a large bowl, combine the chopped rhubarb, sliced strawberries, granulated sugar, cornstarch, lemon juice, and salt. Stir until everything is well coated. Let the mixture rest for 15 minutes to allow the fruit to release some of its juices.
3. Pour the filling into the prepared pie crust.
4. Place the second pie crust over the filling. Trim any excess dough, then seal and crimp the edges. Cut several small slits in the top crust to allow steam to escape.
5. In a small bowl, whisk the egg and brush it over the top crust, then sprinkle with coarse sugar.
6. Bake at 425°F for 20 minutes.
7. Reduce the temperature to 375°F and continue baking for 35–45 minutes, or until the crust is golden brown and the filling is bubbling in the center. If the crust begins to brown too quickly, loosely cover it with foil.
8. Remove the pie from the oven and let it cool for at least 3–4 hours before slicing. This gives the filling time to thicken and set. Enjoy!
