If you have a Dash Mini Waffle Maker sitting in your cabinet, this recipe is for you! Our youngest child loves those little frozen Eggo Mini Cinnamon Waffles, so I started making a homemade version using our Dash waffle maker and pancake mix.
They’re soft, lightly sweet, freezer-friendly, and perfect for quick breakfasts before homeschool, church, or a day at the pool.
Copycat Eggo Mini Cinnamon Waffles
Ingredients
2 cups (240 g) pancake mix
1 tablespoon (12 g) brown sugar
1 teaspoon ground cinnamon
1 teaspoon vanilla extract
1 large egg
1½ cups (360 mL) milk
2 tablespoons (28 g) melted butter or neutral oil
Directions
1. Preheat your mini waffle maker.
2. In a large bowl, whisk together the pancake mix, sugar, and cinnamon.
3. Add the egg, milk, vanilla, and melted butter or oil. Stir just until combined. A few small lumps are perfectly fine.
4. Lightly grease the waffle maker if needed.
5. Pour about 2 tablespoons of batter into the center of the waffle maker (adjust slightly depending on your model).
6. Cook for 2½–4 minutes, or until golden brown.
7. Transfer to a cooling rack while cooking the remaining waffles.
To Freeze
- Let waffles cool completely.
- Freeze in a single layer for about an hour, then transfer to a freezer bag.
- Toast straight from frozen until hot and crisp.
Notes
- Add a little extra cinnamon if your family loves a stronger cinnamon flavor.
- These taste great with maple syrup, peanut butter, fresh fruit, or yogurt.
- If you like crispier waffles, cook them an extra 30–60 seconds.
