Mini Meatloaves

Ingredients
2 tablespoons olive oil
1 cup chopped onion
1/2 cup chopped mushrooms
1 cup fresh spinach
1 tablespoon dried parsley
2 teaspoons dried oregano
1 tablespoon Worcestershire sauce
1/2 tsp salt
1/2 teaspoon pepper
1 pound of ground beef
1 large egg
1/3 cup ketchup
1 teaspoon hot sauce

Directions
1. Preheat oven to 350 F.
2. Heat a large skillet to medium-high and saute onions, mushrooms, and spinach in olive oil until lightly browned and cooked through, about 5 minutes.
3. Combine the next 8 ingredients (through the egg) in a large bowl.
4. Spray a 12-cup muffin tin with cooking spray and put a half cup of the meatloaf mixture into each cup.
5. Mix the ketchup and hot sauce and brush onto the mini loaves. Bake loaves for 30 minutes.
