1/2 cup granulated Sugar
1/2 cup brown Sugar
1/2 cup creamy peanut beanut Butter
1/4 cup unsalted butter, softened
1 large egg
2 tablespoons Honey
1 1/4 cups all-purpose flour
3/4 teaspoon baking soda
1/2 teaspoon baking powder
1/4 teaspoon salt
Additional Granulated Sugar
1.Preheat oven to 375 F. In a large bowl, beat 1/2 cup granulated sugar, the brown sugar, peanut butter, and butter with an electric mixer on low speed until well mixed.
2. Beat in the honey and egg until well blended. Beat in the remaining ingredients until dough comes together.
3. Shape dough into 1 1/4 inch balls. Place balls about 3 inches apart on ungreased cookie sheets. Flatten in crisscross pattern with a fork dipped in additional granulated sugar.
4.Bake 7-9 minutes or until light golden brown. Cool one minute; remove from cookie sheets to cooling rack. Cool completely, about 15 minutes.
