2/3 cup packed brown sugar
3/4 cup milk
1/2 cup canola oil
2 large eggs
2 1/4 cups all-purpose flour
1 cup quick-cooking oats
3 teaspoons baking powder
1 teaspoon cinnamon
1/4 teaspoon salt
1 cup fresh blueberries, or frozen and thawed blueberries
1. Preheat oven to 350 F and grease an 8 or 9 inch loaf pan.
2. In a large bowl, mix brown sugar, milk, oil, and eggs. Stir in remaining ingredients except blueberries.
3. Beat for 30 seconds and gently fold in blueberries. Pour into pan and sprinkle with additional oats.
4. Bake 45-55 minutes. Cool for 10 minutes and remove from pan. Cool on a wire rack for 2 hours before slicing.
