Garlic Lime Chicken

Marinated and grilled chicken just screams summer to me. Now that summer has finally arrived in Pittsburgh, I’ve been grilling up a storm, and garlic lime chicken is one of my favorite dishes to make lately.

With a tiny bit of prep work, this chicken comes together easily. It goes great with a side of rice, and would also be delicious in a wrap with hummus and grilled vegetables!

Garlic Lime Chicken

Ingredients
1/4 teaspoon black pepper
1/2 teaspoon salt
1 teaspoon paprika
1 teaspoon garlic powder
1 teaspoon dried parsley
3 limes
1 teaspoon minced garlic
1 lb chicken breast tenders
2 tablespoons canola oil

Directions
1. In a small bowl, combine the pepper, salt, paprika, garlic powder, and parsley. Rub spices onto the chicken tenders and place in a large bowl.
2. Juice and zest two of the limes. Add the juice, zest, and minced garlic to the chicken and stir until the chicken is evenly coated. Place in refrigerator for one to three hours.
3. Preheat grill to medium high and brush with canola oil. Cut up remaining lime into wedges.
4. Add chicken breasts to grill and cook until completely done, about five to seven minutes on each side.
5. Turn grill heat to low and grill the lime wedges for about one minute on each side.
6. Serve chicken with lime wedges and enjoy.

Life has been so beautifully full lately. I keep thinking I’ll have more, please, if that is your will, God. 

Life isn’t always easy, but it is incredibly blessed. The hard days are blessings in their own special way. The good days are absolutely amazing, and I want to soak it all in.

I’ll take more celebrations. More birthday parties. More get-togethers. More date nights. More time meeting new people. I went to my friend Kim’s house for her daughter Annabelle’s first birthday party and it was such a beautiful celebration. I can’t believe sweet Annabelle Grace is a year old!

I’ll take more renovations. More time making our house a home. More happy exhaustion from hard work. More trips to hardware stores to wander around aimlessly.

I’ll take more of Pittsburgh. More baseball games. More exploring the city. More new restaurants. More adventures.

I’ll also take more time spent with God. More journaling and Bible studying. More writing. More Pinterest browsing. More time spent reading and listening to podcasts. More traveling. More smiles. More coffee. More photography. More sleeping in. More staying up late. More drawing and painting. More deep conversations.
