We enjoyed our second and final day of Jimmy’s staycation! I’ll tell ya what, I think I like staycations just as much as “real” vacations where you travel somewhere.
Friday found us once again busy with a mixture of work and play. First up, we headed to Trax Farms to look at the pumpkins and pick up locally grown apples for pie. Jimmy and I also grabbed coffee because coffee is always a good idea 😉
The farm store had half peck-sized bags that you could fill with any variety of apple, so I filled one with a couple of each type of apple that is best for pies. I must have had six different kinds of apples in that bag and Jimmy was so pumped for me to make a pie.
His absolute favorite dessert is apple pie, so he was eager for me to get baking! I will have to share my recipe on here. Jimmy’s mom makes the best apple pie and she gave me her crust recipe years ago. I try to always use it when I bake pies because it’s so simple and tasty.
While I worked on some Etsy orders and the pie, Jimmy and Sadie went to the trampoline park. I figured I was better off staying at home and getting my baking work done because I don’t think jumping on a trampoline is advised at nine months pregnant 😜
I baked a batch of cherry almond granola and peanut butter granolafor the Etsy orders along with the pie. I had some pie filling left over, so I put a few slices of the filling in between biscuits for future breakfasts. The house smelled good by the time Jimmy and Sadie came back!
Jimmy’s sister watched Sadie in the evening(!), so we used our free time to go on a little date! I booked reservations for a local restaurant and we had such a nice time chatting uninterrupted and not doing dishes.
We enjoyed pretzel bites with honey mustard (my fave!), salmon, and wagyu steak. We went down a rabbit hole researching wagyu beef and it was interesting to learn about. After dinner, we headed home so Jimmy could work on baby’s nursery before Sadie got dropped off.
It was another great day with a mixture of productivity and family time!

I adore apple pie. It is hands down my favorite pie. I don’t know if I could choose a favorite dessert though…probably cake. Chocolate cake. Or cookies. Or a muffin. TOO MANY CHOICES. What I eat daily for dessert though is chocolate. So maybe that is my favorite. I’m glad you two were able to have a nice date night, so important!!
Isn’t it hard to pick a favorite dessert?! I know it is for me, too! I’d never turn down chocolate 🙂
We are so bad at letting date nights slide, but every time we have one we’re like “why don’t we do that more often!” lol.
I’m sure being a parent makes it difficult. It also makes the moments you do get together one on one so much more special!

That looks like a delicious apple pie! The smell of apples baking with cinnamon is so good, I could almost smell it just by looking at those pictures. I’m glad you, Jimmy and Sadie had some lovely family time together, and a date night too.
It’s hard to pick my favourite appetizer and dessert! I’d probably say spring rolls with dipping sauce for an appetizer, and tiramisu for dessert.

I tried summer rolls for the first time this weekend and they were delicious! They’re like a fresh version of a spring roll, wrapped in Vietnamese rice paper with a chili dipping sauce. Sooo good!
