Hello and happy Thanksgiving!

The pumpkin pie I baked today. Looks okay-ish... but I'm sure it will taste good!

I’m pretty sure I have a low-key holiday in store, with only my immediate family and sister-in-law celebrating together. I’m so happy that I’m staying home with my family because the last time we were all at home together for Thanksgiving was in 2010.

Penn State has been on Thanksgiving break since Monday, and it’s been pretty amazing. Before the break, I made some lofty goals that included finishing up a big project and practicing my senior research presentation. It’s taken me longer than I expected to complete my goals because I’ve been feeling so burnt out on school work! I really needed this break.

Jimmy and I spent a scary amount of time at Panera Bread over the weekend while I worked on homework.

When I haven’t been working on homework, I’ve been baking, reading, or walking Lola and Moses. That’s about it! I love it.

Mine and Lola’s walks have been a little bit chilly because…

Pittsburgh has been getting some snow!

I’m making sure to keep warm in the kitchen by baking cookies and cooking  soup.

Vanilla-frosted sugar cookies, to be exact ;)

Vanilla-frosted sugar cookies to be exact ;). I will post the recipe soon!

Some Thanksgiving-ish recipes:
6 Ingredient Turkey Soup (Great for using up leftover turkey!)
Pumpkin Spice Pancakes
Butternut Squash Muffins
Mashed Potatoes for One
Dairy-Free Pie Crust
Honey Cinnamon Dog Treats (For all the pups out there!)

What are your Thanksgiving plans?

Are you baking or cooking anything?!

  1. Ew I do NOT want to see snow anytime soon! haha anyways, you’re so lucky you have the full week off! We have Wed-Sun for break but those extra two days would have been nice. I’m glad you’re enjoying time with your family, that’s the best way to spend a holiday 🙂

  2. It doesn’t really snow here but it’s pretty to look at pictures of yours :). I would soooo go to Panera to study or do homework too, don’t blame you there, but ours kinda stinks (fortunately we have a great soup + salad + sandwich place here that I like a lot more). Those cookies you made look really good too, I hope you guys have a great Thanksgiving dinner since you’re all together this year!

  3. I can’t believe all that snow! We are supposed ti have the coldest Thanksgiving in years… makes me SO glad I’m not running a race this year. I’ve been inside baking all night. 🙂

  4. Happy Thanksgiving! 🙂 The snow looks pretty. We haven’t had any here yet and I’m hoping that we don’t get any until after my Christmas break starts on December 6th. I’m not a fan of driving in winter conditions!

  5. That is lovely to hear and we are having a low key Thanksgiving here as well.

I cannot fathom snow right now. I’m still dethawing from Texas honestly and I think this winter season is going to be a huge awakening for me.

  6. I wish I would’ve gotten a whole week off! My Thanksgiving is pretty low key – grandma’s then my house. My outside looks like that too – my turkey trot was in the snow today!

    Have a great day Allie ❤ 🙂
