Hey there! I promised to share the pretzel chicken recipe I mentioned in my last post.

Pretzel Chicken with Honey Mustard

Ingredients:
2 cups coarsely chopped pretzels
12 chicken tenders (about 1 lb.), halved crosswise
1/2 cup yellow mustard
1/4 cup honey

Directions:

1. Preheat the oven to 425 degrees . Place the crushed pretzels on a large plate. Set a rack in a rimmed baking sheet. Thread a piece of chicken onto a 6-inch skewer. Repeat with 23 more skewers. Brush the chicken all over with 1/4 cup mustard. Roll each chicken skewer in the crushed pretzels to coat. Transfer to the prepared baking sheet.
2. Bake the chicken skewers until cooked through, 12 to 15 minutes. Stir the honey into the remaining 1/4 cup mustard and serve on the side, for dipping.

I also created a doggie meal for Lola on Saturday! It’s really simple and only requires three ingredients that most people have in their kitchen.

potatoes carrots and eggs1

Potatoes, Carrots, and Eggs

Ingredients:
2 small potatoes, peeled and chopped into small pieces
2 carrots
2 eggs

Directions:
1. Cut carrots into small pieces. Place potatoes and carrots into a pot and cover with water. Bring to a boil, and simmer for 8 minutes, or until fork tender. Drain and cool the mixture until room temperature.
2. Crack eggs into a small bowl and whisk. Microwave for 30 seconds, and stir to mix. Microwave for another 30 seconds, or until eggs are set. Cool until room temperature.
3. Combine potatoes, carrots in eggs, and serve!

Three life updates:

#1. My brother moved back to Pittsburgh and is getting married in July!

My brother and his fiance, Racquel

My older brother was living and working in State College, PA and moved back to Pittsburgh about a week ago. He bought a duplex in a suburb outside of Pittsburgh, and is getting married in July. He’s also going to begin working with my parents for our family’s real estate business. So now, instead of living two hours away, he now lives about 15 minutes away from my family! I am so happy to have him back home again.

#2. I’m doing my internship.Ā
I’m not going to go too in depth about my internship until it’s over, but I’m writing, researching, and editing for 30 hours a week. It’s challenging, but I like it and the experience I’m gaining in the writing field. I’m learning a lot! I’m also learning that it stinks to work 30 hours a week for free ;-).Ā I’m still teaching spinning, so life has been busy lately!

#3. My family is vacationing in the Outer Banks again this summer!

I’m so excited to spend a week in North Carolina again soon! Growing up, my family didn’t go on a vacation every summer, so it’s definitely a blessing to be able to go now! I really appreciate it.

Hope everyone has a great Monday!

Where do you like to go on vacation?!

  1. Oooooh super original idea for the chicken! I have to try it — especially for Max; he LOVES pretzels. (Not chicken so much. Maybe this will help!)

Yaaaay for having your brother close again! šŸ™‚ I know how difficult it is to be away from family & I bet it’ll be much better / less stressful for him, you, and your parents! šŸ™‚

  2. CONGRATULATIONS to your brother! He and his fiance make a gorgeous couple! WAHOO for vacations, I can’t wait to go on another one soon..ANYWHERE works for me! So exciting about your internship! You will rock it!

  3. I love to go on vacation anywhere with a beach and the sun! It’s so relaxing to me and truly a paradise! Congratulations to your brother! It’s always nice to have family move back into the area!

  4. I hope you learn a ton from your internship! I loved mine but it’s definitely tough to work that much for free. Hopefully the experiences you gain from it are invaluable!!

  5. I can’t wait to hear about your internship and I know that you’ll do great things with it. You are already a fantastic writer so I can only imagine how that goes! Anyways-look let’s be honest here. The outer banks is literally an hour from my house. I absolutely would be honored to meet you so pleeaseeeeeee contact me when you go down there.

  6. YAY for your brother being closer to you! That is awesome! I love that my sister is only 7 minutes away from me and I don’t know what I would do if she was farther away!

When are you going to the Outer Banks?! We’re going with a group of friends at the end of July!!

  7. I saw a bunch of spinning class stuff going on at my gym and thought about you, wondering if you still taught, so I’m glad you are :). Glad your bro is moving closer as well.

Good luck with the internship. Yeah, working for free does stink sometimes, but if you’re in this industry, you’re here because you love it anyway. It will lead to good things for you, too, even if it’s not paying right now.

  8. Let’s hear it for writing and editing! It’s even more awesome when you get paid to do it as your adult real-world job ;D So glad you get to see more of your bro!

  9. So much to love in this post! Congratulations to your brother and his fiancee. Who can stay away from the burgh? People always seem to end up moving back! As for your internship, I agree with what Amy Lauren said – it will pay off in the long run for sure! And your reward for all of your hard work – vacay in the OBX! I miss that place so much. It is so peaceful!

Hope you are having a great Monday!

PS – I would totally eat Lola’s doggie meal!

  10. The pretzel honey chicken looks delicous!!! I’m glad that your brother is close to your family home now, and that you get to go on a family vacation! That area looks very pretty. Enjoy!

Keep up the good work at your internship! What great experience you’re gaining.
