Cranberry White Chocolate Chip Cookies

I recently made these cranberry white chocolate chip cookies for a wedding, and they reminded me why I love this recipe so much. They’re soft, chewy, full of sweet white chocolate and tart cranberries, and they’re wonderfully easy to make.

Unlike many cookie recipes, this one uses oil instead of butter. That means no waiting for butter to come to room temperature and no chilling the dough before baking. It’s one of those recipes you can decide to make on a whim and still have fresh cookies cooling on the counter before you know it.

I’ve been wanting to post this recipe forever! When I began selling on Etsy, this was one of the first products I offered and was always very popular. You just can’t go wrong with the combination of chocolate and peanut butter, right?
