Swim meet tomorrow morning

This time tomorrow morning (6:50AM) I will be on my way to a swim meet. It is called The Polar Bear Plunge. (Brrr!)

(YMCA State Championship @ PSU circa 2009. Yes, I am dancing.)

I got to pick most of my events but I couldn’t swim some of my favorites because I qualified for “higher” meets in those races. I will be swimming: (My seed times are wrong because I am on a new team so my coaches guessed, I hope to knock them out of the park!)

100 yard butterfly – 1:25.75 (I can get around a 1:12ish..if I try HAHA)

200 yard breaststroke – 2:58.15 (Not sure what my real time is in this?!)

100 yard freestyle – 1:08.15 (I typically get a 1:04, but I got a 59.00 once!)

We were super excited…

So there you have it. I posted some times on the internet.. oh no!! LOL. I could care less. I will post the times that I got at this meet on Saturday night or Sunday.

My goals for this swim meet:

-Beat all of my seed times, by a lot.

-Cheer my little sister on (She is swimming the 50 fly, 100 I.M., & 50 breast)

-Stay loose/stretched out

-Get homework done in my down time

-Have a good time!

Obviously I know how to have a good time 😉 Look, the news is on!!

I am ready for this meet tomorrow morning. My next meet might be in March, which is a big gap but I will have a lot of time to work on what ever I do wrong at this meet! Well I am off to start my Friday.

Short on time dinner + dessert

Last night I was short on time for making dinner so I turned to an easy and super tasty recipe. When I first made it about 6 months ago, my mom and I were leery to try it because it took only 20 minutes seemed too simple. The best cooking can be the most simple though. Without further ado, I introduce:

Gnocchi with shrimp, asparagus, and pesto


Ingredients:

1 16oz package gnocchi

1 bag frozen asparagus

1 pound precooked shrimp

1 cup basil leaves

2 Tbs pine nuts

2 Tbs preshredded Parmesan cheese

2 Tbs lemon juice

2 tsp bottled garlic

4 tsp extra virgin olive oil

Thaw the shrimp, boil the gnocchi for 2-3 minutes, and cook the asparagus in the microwave until just done but still crisp. Mix the gnocchi, shrimp, and asparagus in a large serving bowl.

To prepare the pesto, combine the rest of the ingredients plus 1 Tbs of the water from the gnocchi. Process in a food processor or blender until smooth.

Toss to coat and ta-da, dinner is served!

It can be served hot or cold 🙂

Since dinner only took me 20 minutes, I was able to put together blueberry bread. I didn’t have 1 hour to wait for it to cook because I head to head off to swimming, church, and starbucks so I did a little trick.

I separated the batter into 3 mini loaf pans and cut the baking time in half!

I cannot believe today is already Thursday! I have a busy weekend coming up that involves a possible visit to Dave & Busters, a swim meet, and other fun activities!

For now I am off to walk Lola, head to classes, then off to swim practice.
