First and foremost…

Happy Birthday to my little sister, Hannah! She turned 14 today.

I feel so blessed to be as close as I am with my sister. Here’s some pictures from when we were “youngsters.”For Hannah’s birthday my family + Jimmy + her boyfriend are all going out to eat and then to a baseball game. Fun stuff! I’m also (in the process of) making her a giant cookie cake 🙂

Recent Eats:

Pork chops. I was out to eat at Eat N Park and had a random craving for them. Now I’ve been getting them the past few times I’ve went out to eat. Eggs. With salt & pepper. They were supposed to be scrambled, but I guess I didn’t really scramble them.Zucchini-banana bread. Recipe to come very soon!Lunch with my momma. We went to the Cheesecake Factory and had bread, some seafood/avocado appetizer, and salmon + taco salad. It was fun to spend time with my mom. Baked honey tofu. I can post a recipe if anyone is interested, but it’s really simple. Very tasty though 🙂Thanksgiving dinner. Yes, random. It hit the spot though! I made roasted turkey, stuffing, & crescent rolls. Also included: canned gravy and pumpkin muffins. Yummm.Mom’s chili. Always a favorite.

Mom’s Chili

I know, it’s August. My mom’s chili is just so tasty that we eat it year-round. It’s a simple recipe, but I promise it won’t disappoint!

Mom’s Chili

Ingredients:
1lb ground beef or turkey
1 Tbs olive oil
2 medium green peppers, chopped
1 onion (yellow or red), chopped
1 teaspoon minced garlic
1 can (28-ounces) diced tomatoes
1 can (28 ounces) tomato puree
2 cans (15 ounces) kidney beans, rinsed and drained
1 Tablespoon chili powder
1 teaspoon paprika
1 teaspoon garlic powder
2 teaspoons cumin
1/4 teaspoon crushed red pepper flakes (optional)
1/2 teaspoon salt
1/2 teaspoon pepper

Directions:
1. Heat olive oil on medium high in a large dutch oven. Add the ground beef or turkey and cook until browned. Add the onion, green pepper, and garlic. Cook until vegetables are slightly soft, about 5-7 minutes.
2. Add the rest of the ingredients. Bring to a boil and simmer for an hour, stirring occasionally. Serve with corn bread and enjoy!!
