It is spring! How is the weather for Pittsburgh you ask? RAINY! But it is WAY better than snow 🙂

I had a delightful and fast weekend, how about you? I finished up my last swim meet and went to the mall with my boy (he needed new shorts) Sunday was filled with church and homework. Also my boyfriend’s trampoline. I. LOVE. TRAMPOLINES. [Can ya tell I used to be a gymnast?]

Favorite flavor of spring? COCONUT. This calls for a recipe!

Coconut Macaroons

1 pkg. (14 oz.) flaked Coconut

2/3 cup sugar

6 Tbsp. all purpose flour

1/4 tsp. salt

4 egg whites

1 tsp. almond extract

1. Preheat oven to 325°F. Grease and flour baking sheets and set aside. Combine coconut, sugar, flour and salt in large bowl. Stir in he whites and almond extract until well blended.

2. Drop coconut mixture into mounds, 2 inches apart, on prepared baking sheets, using about 1 tablespoonful of the coconut mixture for each mound. (This should make A LOT of mounds, btw!)

3. Bake 20 min. or until edges are golden brown. Immediately remove from baking sheets to wire racks. ENJOY!

I’m in love with coconut for real. I also love mostly every single fruit flavour nom. But when strawberries go on sale, I think I buy them buy the bulk ha.

I’ve never tried cinnamon raisin swirl pb. I got out for a walk on saturday. The weather was great. I am hoping for a break in the rain this week so that I can take the baby for another walk. I’m glad it’s spring!
