Hey hey, what’s up? I cannot believe it is already Wednesday!!

SO true. Any time I think I did something, I remember that it is God who gave me the strength!

I have some pictures and a recipe to share!

First for the pictures:

Now for the recipe!!

Lemon Poppy Seed Muffins

1 cup whole wheat flour
1 cup all-purpose flour
1/3 cup sugar
2 tsp baking powder
1 tsp baking soda
1/4 tsp sea salt
1 egg
1/2 cup soy/rice/nut milk
1/2 cup maple syrup
1 tsp lemon extract
2 tbsp poppy seeds
-Preheat oven to 350F and oil the muffin tin or line it with baking cups
-Combine the flours, sugar, baking powder, baking soda and salt
-In a separate bowl, combine the egg and milk with the lemon juice and set aside for few minutes (it will look curdled!!)
-Whisk in the oil, syrup and lemon extract
-Add the wet ingredients to the dry ingredients and stir until just combined
-Fold in the poppy seeds
-Pour batter into muffin tin and bake for 15 to 18 minutes or until a toothpick comes out clean
-Cool completely in the pans on a baking rack & ENJOY!

So there you have it, some delicious muffins and a few pictures. I am super busy this week with school work/studying for finals. Butttt I’m supperrr glad I have muffins to enjoy 😉
 I think lemon poppy seed muffins may be my new favorite muffin :]
