It’s time for Penn State’s spring break! My mom and I are going to Tampa for a few days. I feel so blessed! The weather is going to be okay (60s), but it’s better than Pittsburgh’s current weather (20s). I’m so excited to explore the area and spend time with my mom.

I just have to get through the flight. I would really, really appreciate prayers…

Flying is my biggest fear. 

It’s important to step outside of my comfort zone though! I’ll be knocking two resolutions off of my list for 2013 (travel more and do scary things).

Recent Eats

Howdy!

Here are some of my recent eats:

chineseSemi-homemade General Tso’s chicken. I just breaded the chicken with flour and fried it in oil for a few minutes, and then added enough sauce to coat the chicken. Easy peasy.

IMG_4967A fellow classmate was fundraising for THON, so I had to show my support 😉

IMG_4995Black eyed pea stew! I found black eyed peas on sale at the grocery store for 50 cents, so I researched some soup recipes and made this stew. The only thing I changed was that I replaced the kielbasa with sausage. It was great!

IMG_4993Check out the new Pop-tart flavor! I tried the limited edition marshmallow hot chocolate flavor in this post and the strawberry flavor in this post. Red velvet? Highly recommended.

Don’t worry, I’m still giving lots of love and kisses to Lola, the most shiny dog in the world. I need to learn her secret for shiny hair… lolaI can’t imagine life without animals! They’re such a blessing.
