6 ingredient leftover soup

I’m pretty sure one of the best aspects of Thanksgiving is the abundance of leftovers. Since Thursday I have had countless plates of “Thanksgiving dinner” all over again. I’m not sick of turkey yet!

It can get boring to eat the same dinner over and over again, so I made a simple soup out of leftover turkey.

Leftover Turkey Soup

2 tablespoons olive oil

1 onion, chopped

4 stalks celery, chopped

3 carrots, sliced

6 cups chicken broth

2 cups turkey breast

Directions: Saute the vegetables in a pan in the olive oil until soft and add pinch of salt and pepper. Pour  the broth into the pan and add the turkey. Bring to a boil, cover, and simmer for 1 hour.

Enjoy with other leftovers, like mashed potatoes + gravy!

I hope everyone is having a nice Sunday. I went to church this morning and now I’m working on homework (I go back to school tomorrow). I might go bowling later with Jimmy or walk Lola, though it is raining out-ugh.

Thanksgiving

Hello hello! Thanksgiving was a success! Whoop whoop. I cannot tell you how nervous I was to be cooking a full meal for other people that weren’t my immediate family. I had a headache at the beginning of the day and I felt sick from nerves. Now that it is all over, I can’t believe how worried I was. Silly.

I woke up around 7AM and went for a chilly 35 degree run to clear my head. I spiced and oiled the 21lb turkey then put it in the oven at 10:30 for 4.5 hours at 350 degrees.

This was after it had been in for about an hour.

The popper popped and I took it out around 3:00PM.

Jimmy came over around 1:00 and helped me peel potatoes, set the table, and do little last minute type chores before his dad, brother, and sister arrived.

Jimmy’s dad carved the turkey while I finished up making the stuffing, mashed potatoes, gravy, broccoli, and pulled the green bean casserole out of the oven. Jimmy’s sister, Laura, helped him roll out crescent rolls and we put those in the oven and sat down for a prayer and then dug in around 3:30pm.

After dinner we had coffee, cookies, and pie. Then we had some fun! We played cards, Just Dance 2, and Twister. We also watched Punkin Chunkin; that was a really funny TV show!

We played Blackjack with fake money from the board game Life.

Watching the Dallas Cowboys win on Thanksgiving was pretty amazing! I had such an awesome day and I felt so blessed to be surrounded by such a loving family!

Today is black Friday and you couldn’t pay me to go near a mall, sorry. I’m cleaning up the house today and studying and then going bowling later tonight!
