Harvesting tomatoes and green peppers

I’m back with another garden update. Our tomatoes and green peppers are growing well and producing a lot! We’ve been having the peppers with hummus, and I’m thinking I need to make fajitas and chili soon.

Does anyone have any other ideas for using up an abundance of green peppers?

As for the tomatoes, I used all but the grape tomatoes to make soup last night. I sautéed a red onion in olive oil and added some freshly chopped basil. In went the chopped tomatoes, seasonings, and chicken broth. It was simple and delicious. I had the soup today with a tuna sandwich and it hit the spot!

I so wish I could have all of my blog friends over for dinner and we could eat the produce from my garden and enjoy each other’s company. I’d make sure to send everyone home with tomatoes, peppers, zucchini and cucumbers.

  1. I love that Lola sits to the side when she sits down. So cute. Is that a hip thing as she’s getting older or has she always done that?

    How cute are you with your cooking segment of this video?! I loved that!!

    And I have to tell you, I watched this video with Oreo fast asleep on the couch beside me. His head popped up SO fast when he heard you guys asking Lola if she wanted to go on a walk, haha!

    1. The way Lola sits just cracks me up! I think it’s a hip thing! She doesn’t seem to be in pain, but I always wonder.

      I had so much fun matching the music to the cooking segment, haha. I love doing creative/fun things like that 🙂

      Awww, Oreo!!! How cool would it be if we could take Oreo and Lola on a walk together?! The dobby-ear dogs!

  2. Hmm…I’m not the biggest pepper fan, but maybe stuffed peppers? With cheese and breadcrumbs and such?

  3. Oh my you and Jimmy are excellent gardeners! I wish I could come over for dinner too. That fresh produce looks delicious. But mostly I would just enjoy hanging out with you.

    With the peppers! Stuffed bell peppers are tasty. I’ve made them stuffed with ground sausage and rice and a little cheese – so delicious. Not the healthiest because…sausage. But a nice treat every once in awhile. Also we’ve quartered and grilled bell peppers this year with a little olive oil, salt and pepper brushed/sprinkled on them. Easy and delish as a side to a meal. Or on a warm sandwich would be great! Fajitas (which you already mentioned) are a regular in the house too.

      I am totally craving stuffed peppers now. I’m going to make them this week, I think!

  4. These veggies look so fresh and colorful 😮 If I could grow veggies as fresh as that where I live I probably would never have to go grocery shopping again, haha.

    1. Thank you, P! I know what you mean about never having to go grocery shopping, haha. We pretty much just buy lettuce and fruit when we get produce during the summer months. It helps our grocery bill quite a bit 🙂
