Cats, cookies, and more

This post is going to be r-a-n-d-o-m. Sorry! First things first, I have to share this video of Jimmy!

Mine and Jimmy’s friend, Brett, studied cinematography at Point Park University and he purchased a new camera a while back. He decided to film Jimmy welding, with a little (furry) surprise at the end!

Speaking of furryness (<– totally not a word), I was crazy excited a few weeks ago when a new pet sitting client asked if I could watch his cats! I pet sit dogs on the daily, so getting to watch two cats was a nice treat. I took care of Taco and Huey this past week, and it was lovely.

Taco and Huey are litter mates, which is pretty neat. They’re a little over a year old, and super playful. I adore cats, and miss living with my parents’ cats, Lily and Felix.

Speaking of work, I got to do something really fun last week. As I’ve mentioned before, I work as a personal assistant for a family. I do a little bit of everything–cooking, cleaning, bookkeeping, errands, baby sitting, etc.–and last week I had to make penguin cookies for the youngest child’s birthday party. I went on Pinterest, typed in “penguin cookies” and hoped for the best. I used two different recipes; one featured Oreos, and the other was made with crackers and peanut butter. They both looked pretty similar, though. Here’s they came out…

While I was making the cookies, I was listening to Christmas music and just jammin’ out with the family’s dog by my side. I kept thinking how blessed I feel that I get to do things like this for my job. When I graduated from college a year ago, I had no idea what was in store for me work-wise, but I would have laughed if you told me I’d be making penguin cookies in someone else’s house on a Friday afternoon. I can’t imagine life any other way right now, though!

Since we’re on the topic of food, I thought I’d share a soup recipe I recently made. I found this chicken and parsnip soup recipe online and gave it a whirl. Jimmy wasn’t a huge fan–I think the parsnips freaked him out–but I really enjoyed it. I loved that it was different than a basic chicken soup recipe because the parsnips added a nice kick. It goes great with corn muffins, but I’m probably biased because cornbread is one of my favorite foods.

Continuing with the randomness… guess what! Jimmy and I bought new windows for our house! They were much needed, and we can already feel a difference in heat retention overnight. Though, we didn’t have a problem with cold weather today. I took a snapshot on my phone of my weather app while I was walking Lola today.

70 degrees in Pittsburgh. In December. Wow! I’ll take it 🙂

Alright, that’s enough randomness for today. I’m off to print cookie recipes. My mom and I are baking cookies together next weekend to assemble cookie trays to give to our neighbors as Christmas gifts. I’m so excited!

  1. The weather was lovely today! I even ate dinner outside. It’s too bad actually being so warm because this weekend was the Ithaca Ice Festival and carving competition. Usually after the show, the ice sculptures are put on display around town…I have a feeling they will melt before too long 😦
    Taco is the best name for a cat! (…or child…)

    1. Yay for dinner outside in December! That’s always such a nice treat. I wonder how the Ithaca Ice Festival and carving competition turned out? Maybe it got colder in the evening?!

  3. Those cookies are the cutest :). I’m glad you love your job even if it isn’t what you planned to do post-college. Sometimes that’s even better. Glad you guys got new windows in preparation of winter and cold weather!

    1. Thanks, Amy! The parents said their kiddo was giggling at them. Not sure if that was good or bad but I’ll take it, lol! And yes, I am so glad I’m loving my job (random or not!) and the fact that we got new windows. They have already made such a huge difference. I don’t know why we didn’t get them sooner!

  4. I love house sitting with cats, they are so easy! My main house sitting dude…had to be put down a couple weeks ago. I’m not house sitting…the house. And it was SO SAD to be there at first without him. I cried. lol.

    1. Cats really are so, so easy. With the job I just did, I was like wait… why is this so simple?! Haha. I am so sorry about your main house sitting dude! I would totally cry, too!!

  5. Oh goodness, that furry surprise at the end of the video is so cute!

    I love cats too — I have one cat and her name is Kitty. She’s so pretty and has lots of different colours in her coat. One of my work colleagues adores cats too and she always asks me how Kitty is doing. My colleague had been feeding a stray cat (a ginger tomcat who’s only about a year old). She can’t keep him as she lives in an apartment that doesn’t allow pets. 😦 I wish I could adopt him, but I don’t think Kitty would like it.

    You know, when you said that a year ago, you had no idea that you’d be doing what you are now — I feel exactly the same. My plans have shifted quite a lot, but life has gone in a good direction. We must catch up via email soon! I know I said that before, haha, but my days are just so busy and I expect yours are too. Do you still use your college email address?

    The penguin cookies look great! You really should open a bakery. 😀

    1. Yes! Isn’t the furry surprise the cutest?! That was Jimmy’s childhood dog, Tobi. She actually passed away not long after this was filmed, so it’s really nice to have her captured on such good quality film forever now!

      I love that you cat’s name is Kitty. That’s the sweetest. She sounds like she is beautiful (I’d love to see a picture!!) and it must be so nice to have your colleague ask about her. I love when people care in that way. It’s refreshing! Totally understandable about the stray cat and you taking it in. It’s always tough in situations like that, but you’re doing the right thing by honoring Kitty since she’s the cat-boss of your home (LOL). I couldn’t think of a better way to say that for some reason?!

      Isn’t it amazing how God can shift our paths and they end up so much better than we could have planned ourselves?! I just adore that, especially when I can look back and so it so clearly. It’s just astounding–in the very best way. I have been thinking about how we need to catch up, too!! I would love to get an email! I now use this email address: allie@southboundenterprises.com :). Sadly, my college email was “shut off” six months after I graduated!

      Thanks for the compliment on my penguin cookies!! I was so nervous to make them, but I shouldn’t have been because they were fine and the kiddo was happy with them. That’s all that mattered to me ;). And oh my gosh, how fun would it be to open a bakery?! Like we said… you never know what God has in store down the road!

        I’ll definitely send you a photo of Kitty. 🙂 I have a photo of her as a kitten as my desktop PC screensaver at work. She makes me smile throughout the work day!

        I like your phrase! ‘Cat-boss’ is a good way to describe her — she can be quite demanding!

        Oh, absolutely! I was worried about the future (money etc.) after I graduated. In fact, I had planned all along to start a Masters in the fall, but after four weeks I knew it wasn’t the right Masters / the right time. And I was so fortunate to be offered this great job. I tried to keep faith throughout it all and trust that things would be okay, and they are. 🙂

      2. Yes, she was a sweetie! Well, sometimes she was spunky…but she was mostly sweet ;). I’d love to see the photo of Kitty! I bet your desktop screensaver is super adorable. It’s the best when little things like that can make you smile all day. I’m glad that “cat-boss” describes Kitty well, LOL!

        Wow, I had no idea about your plans changing and how everything came together for you in the fall! Good work on keeping the faith and going with the flow through it all! God is so good in how he works in our lives. Day in and day out, I am amazed when reflect on my life and hear about other peoples lives. Love it!

    Also, that video of Jimmy is incredible. Your friend did a great job with that. If it had been put to creepy music I would’ve been terrified because it’s so dark and professional looking!
