Recipe time!
Pumpkin Spice Pancakes
1 cup flour
1 tablespoon brown sugar
2 teaspoons baking powder
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
1 teaspoon pumpkin pie spice
1 egg
1/2 cup canned pumpkin
2 tablespoons vegetable oil
Directions:
- Combine the dry ingredients in a bowl. In another bowl, whisk the egg, milk, pumpkin and oil. Stir into dry ingredients just until moistened.
- Pour batter by 1/4 cupfuls onto a hot greased griddle. Turn when bubbles form on top of pancakes. Cook until second side is golden brown. Serve with syrup.

The brown sugar is pretty awesome in em! Sometimes I add molasses too for extra sweetness and spice :o)
I like pumpkin pancakes the best, but they’re the best from this greasy diner in my hometown 🙂 I don’t like mix-ins in pancakes, like chocolate or fruit…blah!

Right now I’m in a very festive pumpkin mood for pancakes. Soo good. I love adding brown sugar too. I think it gives them the pop they need 🙂

These sound great; thanks for sharing the recipe! Our family likes chocolate chip pancakes with cool whip on top. Not the healthiest choice, but they sure are a yummy treat from time to time!
