How was everybody’s Resurrection Sunday?! Mine was very relaxing and fun! I attended Church and went to Bravo Italian Restaurant with family and basically chilled. Well I have some other exciting news. But i’m not ready to share yet because I’m not 100% sure! My Resurrection Sunday included some of this:

My family goes to Starbucks to bond… and everyone goes on their phones! Crazy.

^ Smoothie mix from Whole Foods. It was $2.49 but Jimmy found a dollar on the ground so it was actually like $1.49 😉 Anyways, the smoothie mix was very chocolately and it said to mix it with water, but I mixed it with soymilk and it was good, except a little chunky!

Now onto today. I am going to post a recipe on my recipe page!Here are some pictures from my creation…. Vegetarian Split Pea Soup.

Ummm yeah, why did I make soup?! I suppose I am just weird because I also eat chili in August and throughly enjoy it 🙂

SO true. Any time I think I did something, I remember that it is God who gave me the strength!

Now for the recipe!!

Lemon Poppy Seed Muffins

Ingredients:
1 cup whole wheat flour
1 cup all-purpose flour
1/3 cup sugar
2 tsp baking powder
1 tsp baking soda
1/4 tsp sea salt
1 egg
1/2 cup soy/rice/nut milk
1/2 cup maple syrup
1 tsp lemon extract
2 tbsp poppy seeds
Directions:
-Preheat oven to 350F and oil the muffin tin or line it with baking cups
-Combine the flours, sugar, baking powder, baking soda and salt
-In a separate bowl, combine the egg and milk with the lemon juice and set aside for few minutes (it will look curdled!!)
-Whisk in the oil, syrup and lemon extract
-Add the wet ingredients to the dry ingredients and stir until just combined
-Fold in the poppy seeds
-Pour batter into muffin tin and bake for 15 to 18 minutes or until a toothpick comes out clean
-Cool completely in the pans on a baking rack & ENJOY!

 I think lemon poppy seed muffins may be my new favorite muffin :]
