Book and recipe

Hello there. My brain is fried right now from studying for finals and just generally keeping up in life. I got offered more hours to teach spinning and I’m very ready for school to be over!

I  recently read a really good book. I had seen You’re Already Amazing a few times in the bookstore and I never bought it because I thought it might be cheesy, but I was so wrong. A big concept in the book is that you don’t have to do more, be more, or have more because you’re already amazing.

Here’s two of my favorite excerpts from the book: I really recommend this book to anyone! It was very uplifting, positive, and an eye-opener!

Now onto that recipe,

Mashed (Sweet) Potatoes for One Ingredients:
1 potato, peeled
2 tablespoons olive oil or butter
1/4 cup milk
salt and pepper to taste

Directions:
1. Chop the potato into small cubes or chunks. Fill a small saucepan with water and place the potato inside.
2. Bring to a boil until fork-tender. Drain the water and mash the potato in a small bowl with a fork (or a potato masher or hand mixer).
3. Add the olive oil or butter, milk, salt and pepper. Mash until desired consistency and enjoy!
*Note: If you make this with a sweet potato, it tastes really good with cinnamon and honey!*

  1. That book looks so good! I need to get my hands on it for sure. It reminds me in some ways of “Captivating”… SO good!
