Cake Deliberations and Trader Joe’s Finds

Okay, so I’m kind of back to square one with my father-in-law’s wedding cake and I’m pretty happy about it. Let me explain!

The photos below are the inspiration cakes my father-in-law’s fiancé sent me. I noticed that all the cakes have fondant on them, which isn’t a problem because it’s pretty easy to mold and work with. In case anyone is wondering, fondant is an edible icing used to decorate cakes. It kind of has the consistency of play dough, but makes cakes have the extra smooth and polished look to them.

I made a trial layer cake last week just to goof around with the fondant, amount of cake dough needed, etc., and had them try the cake. I wasn’t surprised when they were totally weirded out by fondant because I’ve never met anyone that’s like “I love the taste and texture of fondant!” haha. It’s just weird, but makes cakes look flawless.

The trial run cake.

After talking, they decided they want a frosting that is smooth on the cake but also tastes good and doesn’t feel like eating play dough, so that’s where I’m at! My father-in-law really likes my buttercream recipe, so I’m going to do something along those lines. As for the look of the cake, they want it to say “ride with me forever” and have Harley Davidson colors.

Right now, we are nailing down cake flavors before I start making tiered cakes with decorations again. Since the cake is going to be three layers, they have a lot of options! I think I’m going to make either a few small cakes or cupcakes in a variety of flavors for them to test out one evening and then they can decide what they want for each layer.

Here are my flavor combination ideas

  • Strawberry cake + vanilla pastry cream filling + marshmallow buttercream
  • Chocolate cake + caramel mousse filling + chocolate frosting
  • White (vanilla and almond flavored) cake + strawberry preserves filling + marshmallow buttercream
  • Lemon cake + lemon curd filling + lemon buttercream

If you have any flavor combo suggestions, let me know! I wanted to do some “different” cake flavors (think: lemon rosemary, lavender-honey, mocha banana, etc.), but I don’t know if that’s very wedding-y.

Okay, onto the Trader Joe’s finds! I just went today to pick up groceries (yup, still cheating on Aldi over here!) and found some things I’m excited to try.

Trader Joe's maple nut granola, bite sized everything crackers, and pumpkin Puffins

Up first is the cranberry maple nut granola, which I think would be so good with a bowl of yogurt or milk. In the middle are bite sized everything crackers, and on the right is one of my all-time favorite cereals, Puffins!

Trader Joe's peanut butter, sourdough bread, red split lentils, and blueberry acai exfoliant

I also picked up peanut butter (and already dug in the jar the second I got home…), red split lentils, sourdough bread, and blueberry acai facial scrub.

When I saw the lentils, I immediately thought of a soup recipe by Aarti Sequeira that I’ve been wanting to try, and the bread will be great to dip into the soup and use for sandwiches. I’m pumped to try the facial scrub. I just recently bought this (highly rated!) clay mask and this toner, so I think I’m all set to do an at-home facial!

Do you ever buy groceries from Trader Joes? If so, what’s your favorite TJ’s product?

If I had to pick, I’d say mine is their sunflower seed butter!

Current book The City Baker’s Guide to Country Living by Louise Miller. I’m about 1/3 of the way into it and so far it has been a light, easy read.

Current Drink I literally just finished drinking a Dunkin’ Donuts coffee as I started this post. ‘Twas delicious.

Current beauty product DevaCurl shampoo and conditioner. As I mentioned in my last post, my hairdresser really wanted me to try this out. I feel like it’s too soon to tell a difference since I haven’t used it for a solid amount of time, but I’m liking it so far!

Current goal Cleaning out our closets and donating clothes we no longer wear. Also, finishing writing my book. I’m at 81,000 words and so close to wrapping up the first draft!

Current obsession Guys, I’m in cake mode again!! I was asked to make my father-in-law’s wedding cake since he’s getting married in May and I’m 100% obsessed with all things cake right now.

He and his fiancé asked for a Harley Davidson-themed cake, so I’ve been nailing down exactly what I want to do in terms of details and just practicing layering the different tiers of the cake. My fingers are stained with gel food coloring and I’ve been highlighting and studying a guide on working with fondant. I am one happy girl when I’m in cake mode 🙂

A super bare-bones trial run.

Current mood Excited (for spring and Daylight Savings!).

Current blessing Jimmy. He’s just so sweet, kind, caring, and hardworking.

Current excitement Mavis has reached the highest level of training (Adult Level II) at our local pet store and has her last class and Canine Good Citizen test tonight! We have been taking her to training once a week since August, when she was 10 weeks old. She’s basically grown up in this pet store, haha.

It’s definitely bittersweet to be ending this part of her journey because we love the trainer we’ve been working with. I’m sure there’s more training at different facilities in Mavis’ future, though!

Current confession I’ve been so slow about doing laundry lately. I have no problem washing it… it just sits in the laundry basket all clean for like three days until I fold and put it away 😉

Current prayer Healing for all involved in the recent school shooting in Florida.

Current indulgence Researching all things cake-related for my father-in-law’s wedding. I have some flavor combos I’m dying to try!

Current procrastination Catching up on all things computer-related. I have some work for my family’s real estate business to do, I want to catch up on blog reading, clear out my email inbox, and more. It will all get done, eventually!

Current food Thin mints! It’s Girl Scout Cookie season, aka the most wonderful time of the year. What are your favorite flavors of Girl Scout Cookies? My #1 is thin mints and then trefoils.

Current craving I want to paint my nails. I just need to find make the time to do it!

Current need A new wire for our Petzi Treat Cam. Mavis and Lola chewed it while trying to get treats out of the camera so its out of commission for the time being! Naughty pups.

Current question What is your favorite part about spring? I think mine is just seeing green grass again and watching flowers and trees bud. Or maybe more daylight and warmer weather? Or maybe spring rain? Love that sound. It’s just such a beautiful time.
