Recipe time!

White Bean Casserole (vegetarian)

Ingredients:

2 tablespoons olive oil

3 cups sliced mushrooms

1/3 chopped onion

6 garlic cloves, minced

3 cups chopped asparagus

1/4 cup water

1/2 teaspoon dried oregano

2 (15 oz) cans cannellini beans

1/4 teaspoon black pepper

2 ounces bread crumbs

1 tablespoon butter

1/2 cup grated Parmigiano-Reggiano cheese

Directions:

1. Heat a skillet and add 1 tablespoon of oil, swirling to coat. Add mushrooms, onions, asparagus and garlic; sauté 8 minutes or until mushrooms are tender.

2. Add water; cook 3 minutes or until liquid evaporates. Stir in oregano, and beans; bring to a simmer. Reduce heat to medium, and cook for 12 minutes or until thick and beans are very tender. Stir in black pepper.

3. Preheat broiler.

4. Place breadcrumbs and butter in a food processor (or blender!), and pulse until coarse crumbs form. Add the remaining 1 tablespoon oil and cheese to breadcrumbs; pulse until combined. Sprinkle breadcrumb mixture evenly over bean mixture. Broil 1 minute or until crumbs are golden brown.

Enjoy!

(The breadcrumbs are burned in this picture because I broiled it for 3 minutes… you live and learn. It was still delish!)

I said I would try to include running more in my blog… I ran this morning! On the dreadmill. 2.3 miles in 20 minutes = 8:41 pace. Not too shabby, I kind of like the treadmill because once you set it to a certain speed, it forces you to keep the same pace for the whole run-good for speed work!

Also, I figured I would share some pictures of my dog Lola and my little sister’s kitten, Lily. They like to snuggle on my bed 🙂

Alrighty, I’m off to study for an economics test I have tomorrow…. gulp!

  1. YAY for casseroles! This looks great.. though I might try it without the mushrooms.. not a fan!

    Treadmills.. love and hate them. I am okay with them in the summer.. when I CHOOSE to run on them. BUT.. winter time.. when I am forced to run on them.. I kinda start hatin;!

  2. Ooo, that looks delicious! White beans and asparagus would be so good together. My dog and cat? Not so good together–definitely no adorable snuggling there, just wary mutual respect and a strict adherence to personal space limits…

  3. I don’t mind the dreadmill. It can be good for pushing your past your comfort zone and in the digusting weather but I’d rather go on something else if that makes sense. Glad to see you’ll be running and including it more often/ 🙂

  4. Awww they are so cute together! We know we want a second pet eventually, but haven’t decided when. I know Oreo will love having a bestie, though!

  5. If it makes you feel better, I almost always burn my grilled cheese haha.

    I used to only run on the treadmill (!!!) for many years and as soon as I switched to outside running, it was hard to go back in the winter!

  6. Cute pets! I only have 1 dog, but she loves to snuggle, especially now that it’s cooler out. I avoid the treadmill when possible… I belong to a gym now but I use it mostly for boot camp and spinning, not so much the treadmill…most recent treadmill runs: a friend’s treadmill in August and a hotel treadmill in April 🙂

  7. I actually really like training on the dreadmill. I ran on it last February when I was stuck in the middle of no where for PA school in the winter and I had to do like 9-11 miles twice a week. I really think the treadmill helped me with my overall pace because each time I tried to pick up my pace and maintain it. It worked really well.

    Your pup and kitten are soooo cute! 🙂
