Taco Heaven

Yes, I was in taco heaven tonight.

A taco with lots of lettuce, mushrooms, green peppers, tomatoes, onion, and cheese. Plus asparagus. Plus refried beans. I LOVE REFRIED BEANS 🙂

But before I talk about tasty taco’s I want to talk about tasty corn! I had to pack my dinner for work last night *sigh* but it was still delicious.

Bbq chicken with onions, SWEET POTATO FRIES with ketchup, and corn on the cob. Okay, this corn was frozen and then boiled. It was the best corn I ever had. It must have been picked at it’s peak! Yuuuum.

After work I had a decaf mint latte. Hehe. Then I hit the hay!

The New Testament always has encouraging words!

Breakfast was cereal and a pumpkin muffin. I will never get sick of pumpkin. Ever.

Took my puppy for her morning walk. After we got back the sunrise was so beautiful even though it ended up storming later in the day. I suppose those are the best sunsets-the one’s before a storm.

During my taco dinner I pondered taking an online class versus one on campus. What do you think? I can’t decide! It would certainly shorten my time on campus. But everything has its pro’s and con’s.

Okay, one last picture of my dinner… it was so yummy!

I made peanut butter cookies before swim practice 🙂

I’ll tell ya, nothing beats good old peanut butter ;p

Okay, I must be off-either to bed or to do some homework. We’ll see.




  1. dude I love re-fried beans TOO! But I hardly ever make them. I don’t know why. Come to think of it, I should make them more often… haha. That taco looks tasty!

  2. oooh i was so in the mood for taco awhile ago. i made a vegetarian sloppy joe, taco style and i absolutely love itttt. i ate that for 2 weeks (not everyday but most of the days haha).

  3. I’m doing my MA degree online. I did my undergrad at a traditional university and then taught for a few years over in S. Korea. Now that I’m married to my hubs (and the army….), online is just easier for me because we don’t know how long we’re going to be at this particular duty station.
