Short on time dinner + dessert

Last night I was short on time for making dinner so I turned to an easy and super tasty recipe. When I first made it about 6 months ago, my mom and I were leery to try it because it took only 20 minutes seemed too simple. The best cooking can be the most simple though. Without further ado, I introduce:

Gnocchi with shrimp, asparagus, and pesto

Ingredients:

1 16oz package gnocchi

1 bag frozen asparagus

1 pound precooked shrimp

1 cup basil leaves

2 Tbs pine nuts

2 Tbs preshredded Parmesan cheese

2 Tbs lemon juice

2 tsp bottled garlic

4 tsp extra virgin olive oil

Thaw the shrimp, boil the gnocchi for 2-3 minutes, and cook the asparagus in the microwave until just done but still crisp. Mix the gnocchi, shrimp, and asparagus in a large serving bowl.

To prepare the pesto, combine the rest of the ingredients plus 1 Tbs of the water from the gnocchi. Process in a food processor or blender until smooth.

Toss to coat and ta-da, dinner is served!

It can be served hot or cold 🙂

Since dinner only took me 20 minutes, I was able to put together blueberry bread. I didn’t have 1 hour to wait for it to cook because I head to head off to swimming, church, and starbucks so I did a little trick.

I separated the batter into 3 mini loaf pans and cut the baking time in half!

Bible Verse of the day:

Therefore put on the full armor of God, so that when the day of evil comes, you may be able to stand your ground, and after you have done everything, to stand. Ephesians 6:13

I cannot believe today is already Thursday! I have a busy weekend coming up that involves a possible visit to Dave & Busters, a swim meet, and other fun activities!

For now I am off to walk Lola, head to classes, then off to swim practice.

What do you like to cook when you don’t have time?

No more

No more of my life in 30 days. I am almost relieved it is done but at the same time I am a little sad!

I have a few random thoughts/questions for today:

-Can you believe it is already January 17th, 2011?

-Do you celebrate MLK day in any way?

-Do you have today off?

-What brand of coffee do you brew at your home?

, YeahI know the last one was a little random but I was thinking about coffee!!

In my house we drink:

Starbucks Breakfast Blend

Or:

Dunkin’ Donuts Turbo

Sometimes:

Little packets of Arbuckles flavored coffee (My personal fav!)

Yesterday turned out to be a fun day! Ice skating was awesome and not as full as I thought it would be. I brought my camera, but not on the ice because I thought I would fall right on it!! Here are some pictures though 🙂

On our way, listening to music. Susan a lover of music, would be so proud!! (She makes the best mixes!)

Way to look dad! He is NOTORIOUS for not looking. I may have to make a post about him not looking.

Say hello to Chester, Hannah’s hamster who turned 1 years old yesterday. She had a birthday party and even bought him gifts such as a leash (yes, I am serious) and apple sticks (yes, I wanted to eat apple sticks)

There is Chester on his leash! Hannah made him a hoodie too:

Don’t worry, Lola wasn’t left out of the fun 😉 Jim and I walked her and she needed to be warm..

What better way to keep your pit bull warm than a dog vest?!

I made some soup. . .

Butternut squash soup… that I didn’t want my dad to touch.. because it wasn’t done. Sometimes he ignore post it notes… so I used 5 post it notes !

Bible Verse of the day:

Do not be overawed when a man grows rich, when the splendor of his house increases; for he will take nothing with him when he dies, his splendor will not descend with him. Psalm 49:16-17

Here is a little poll for you

Have a great day 🙂
