Pumpkin spice pancakes

Recipe time!

Pumpkin Spice Pancakes

1 cup flour

1 tablespoon brown sugar

2 teaspoons baking powder

1/2 teaspoon salt

1/2 teaspoon ground cinnamon

1 teaspoon pumpkin pie spice

1 egg

1/2 cup canned pumpkin

2 tablespoons vegetable oil

Directions:

  1. Combine the dry ingredients in a bowl. In another bowl, whisk the egg, milk, pumpkin and oil. Stir into dry ingredients just until moistened.
  2. Pour batter by 1/4 cupfuls onto a hot greased griddle. Turn when bubbles form on top of pancakes. Cook until second side is golden brown. Serve with syrup.

Today in the Burgh’ it is rainy and about 40*

This morning I worked for a bit and now Jimmy and I are heading out into the Pittsburgh area to be out and about and what not 🙂 It should turn out to be a nice and relaxing evening!

If Jim would stop being cranky 😉 😉
