Peanut Butter Granola

Peanut Butter Granola


Ingredients:
3 cups rolled oats
1/4 cup canola oil
6 tablespoons peanut butter
1/4 cup honey
1/2 teaspoon vanilla extract
1/2 cup peanuts

Directions:
1. Preheat oven to 325*F and line a cookie sheet with parchment paper.
2. Measure and add the oats into a large bowl and set aside.
3. In a medium bowl, combine the wet ingredients and microwave for 20 seconds. Whisk until well combined. Pour wet ingredients over the oats and stir until evenly-coated.
4. Spread the granola on the baking sheet and bake for 15 minutes. Remove sheet from the oven and add the peanuts; bake for another 10 minutes until the granola is crisp and browned.
5. Remove granola from the oven and cool completely. Store in an airtight container and ENJOY!

My mom brought home a $2.00 food processor from Walmart on Black Friday. I was skeptical but also excited to play with it. When the fall semester ended, I decided to try out a few recipes with the teeny-tiny food processor. I’m still working on perfecting this peanut butter but it’s pretty good 😉

Homemade Peanut Butter

Ingredients

-1.5 cups peanuts (unshelled)

-1/2 teaspoon salt (if using unsalted peanuts)

-2 Tablespoons honey

-2 Tablespoons oil (I use canola)

Directions

1. Place peanuts, salt, and honey into a food processor. Process for 1 minute.

2.Scrape down the sides of the bowl and process again while slowly pouring in the oil until the mixture is creamy.

3. Process another few minutes, until desired consistency is reached.
