Hey hey. Happy April!

I love this month for a few reasons. School is almost over for Penn State, the temperature is beginning to warm up (ha..), the birds are chirping, and this April Jimmy and I celebrate 4.5 years of dating.

I want to share two recipes today.

First up, Southwestern Slow Cooker Chicken. This recipe is so simple and flavorful.

If you have a slow cooker, I recommend giving it a try. You won’t be disappointed! This recipe can also be doubled to feed large crowds. I can vouch for this because my mom and I made a double batch this weekend to feed my whole  family, Jimmy, and my brother’s fiance.

The second recipe I want to share is Triple Chocolate Nutella Cookies.

I made a batch of these on Friday and packaged some up to give to Jimmy as an Easter gift. The rest stayed at my house and are almost gone 😉

That’s pretty much all I have to say today. I’ve just been working on homework and hanging out with my little sister because she has this whole week off of school for spring break.

I’ve also been playing with Felix! He’s fitting in with our family very nicely and we all love his outgoing personality.

Snack mix and biscuit recipe

Have I ever mentioned that my little sister is a picky eater? At this point in her life she eats a few basic foods: hot dogs, Ramen noodles, pizza, salad, fried chicken, candy, mashed potatoes, and peas.

I used to eat in a similar way when I was her age, so maybe by the time she’s my age she’ll be into salmon, corn bread, and massive amounts of peanut butter ;D.

My mom has a tough time packing snacks for Hannah’s lunch, so I collaborated with Hannah to come up with the ultimate “recipe” for a snack mix.

Hannah’s Crunchy Snack Mix
Ingredients:
2 cups Honey Nut Cheerios
2 cups Goldfish
2 cups pretzels
1 cup almonds
1 cup M&M’s

Directions:
Combine all of the ingredients in a large plastic container and mix will. Enjoy!

I was recently flipping through my grandma’s old personal recipe book and found her recipe for baking powder biscuits. I made these back in January, and I’m finally sharing the recipe.

Grandma’s Baking Powder Biscuits
Ingredients:
2 cups all purpose flour
2 1/2 tablespoons baking powder
pinch of salt
5 tablespoons shortening
3/4 cup milk
3 tablespoons melted butter

Directions:
1. Preheat oven to 450 degrees F.
2. In a bowl, mix the flower, baking powder, salt. Add the shortening, and mix with a fork or pastry cutter until the mix is crumbly. Add the milk, a little bit at a time and mix until it forms a ball.
3. Roll the dough on a floured surface to 1/2 inch thick. Cut into desired size and brush with butter. Place biscuits on a baking sheet lined with parchment paper.
4. Bake at 450 degrees F for 10-12 minutes, or until lightly browned and enjoy!
