Coconut Peanut Butter Granola

Two of my favorite flavors combined into one crunchy, sweet, and salty granola: coconut and peanut butter!

I had the idea for this granola after discovering coconut flavored peanut butter. I was dipping spoon after spoon into a jar of this stuff and then thought this would make an amazing flavor of granola!

This recipe is like if my peanut butter granola recipe had a baby with my coconut almond granola recipe. It’s the perfect snack or breakfast and is loaded with healthy ingredients like oats, honey, coconut, and peanuts! I think you’ll love it 😊

Ingredients
3 cups rolled oats
1/2 cup peanuts, chopped
1/2 cup unsweetened shredded coconut
1 teaspoon cinnamon
2 teaspoons vanilla powder (optional)
1/2 teaspoon salt
1/4 cup coconut oil
6 tablespoons coconut peanut butter (or creamy peanut butter)
1/3 cup honey
2 teaspoons vanilla or coconut extract

Directions
1. Preheat oven to 300 degrees and line two baking sheets with parchment paper.
2. In a large bowl, combine oats, peanuts, coconut, cinnamon, vanilla powder, and salt. Stir until everything is mixed together.
3. In a medium bowl, combine coconut oil, peanut butter, honey, and extract. Microwave until everything is melted, about 30-45 seconds. Whisk to combine.
4. Add wet ingredients into the oat mixture and stir until the oat mixture is fully coated.
5. Spread onto the two baking sheets and bake for 15 minutes, or until browned. If you like big clusters of granola, don’t flip the granola while it bakes!
6. Cool for an hour on the baking sheets and store in a resealable bag or container for up to six months. Enjoy!
