I can’t believe I haven’t shared this recipe sooner! Cinnamon raisin granola sounds so simple, and it is, but it’s so good! It’s packed with nutritious foods like oats, chia seeds, raisins, honey, and coconut oil and is a granola I find myself reaching for over and over again!
Also, if you have a nut allergy, this is the granola for you because it doesn’t have any nuts in it! As with all my other granola recipes:
- It’s very customizable
- Easy to put together
- Uses pantry stapes you probably have on hand
- Bakes in about 15 minutes
- Makes a wonderful gift
- Is a great snack or breakfast
Ingredients
3 cups rolled oats
1 Tablespoon chia seeds
1 teaspoon ground cinnamon
1/2 teaspoon salt
1/3 cup honey (or agave syrup or maple syrup if you’re vegan!)
1/3 cup coconut oil, melted
1 teaspoon vanilla extract
1 cup raisins
Directions
1. Preheat oven to 350 degrees and line two baking sheets with parchment paper.
2. Combine oats, chia seeds, cinnamon, and salt in a large bowl.
3. In a small medium-sized bowl, combine honey and coconut oil. Heat in the microwave for 30 seconds and whisk in vanilla extract.
4. Add the wet ingredients to the dry and stir until completely combined.
5. Spread the granola mixture between the two baking sheets and bake for 15 minutes. No need to flip during the baking time if you like big clumps of granola!
6. If the granola looks browned and evenly cooked, pull it out of the oven. If not, I usually turn the oven off and leave the pans in for about two more minutes.
7. Let the granola cool on the pans for an hour. Store at room temperature in a sealed bag or container and enjoy!
