I have to share this recipe for Hawaiian chicken. I adapted it from a Taste of Home recipe and tweaked a few things to work with what I had on hand at the time. My sister and I made this together for Jimmy and her boyfriend and we all loved it.
I think the sauce is what makes it. Pineapple, onions, honey, ketchup, and cider vinegar are thickened and coat the chicken perfectly. This dish is especially delicious when served over rice!
Hawaiian Chicken
1 lb chicken breast, cut into 1-inch pieces
2 tablespoons olive oil
1/2 cup onion, sliced into thin strips
1 can (14.5 ounces) beef broth
1 can (8 ounces) pineapple chunks, undrained
1/4 cup ketchup
1 tablespoon honey
1 tablespoon apple cider vinegar
2 tablespoons cornstarch
3 tablespoons cold water
1. Heat olive oil on medium heat in a large sized skillet and cook until browned. Remove and keep warm.
2. In the same skillet, sauté onion until tender. Stir in broth, ketchup, pineapple, honey, and vinegar. Bring to a boil, reduce heat and simmer for 10 minutes.
3. Combine the cornstarch and water and whisk until smooth. Stir into skillet and bring to a boil. Cook until thickened, about 2 minutes. Serve over your favorite rice and enjoy.
This looks so tasty! I’ll have to make it soon. I love anything with pineapple.
I hope yo get a chance to make it! It has become one of my favorite recipes!
Looks super yummy!
Thanks, Rach!
Reading about that sauce while looking at that photo made my mouth start watering. A LOT.
Sorry :). Just thinking about it makes my mouth water, too!!
