Glazed Orange Cookies

So, there’s this older man named Ted who goes to my church. Guess what he’s “famous” around the church for. His baking! I think it’s the cutest thing when men, especially older ones, bake.

Ted made glazed orange cookies for my church’s vacation Bible school in June and they were a hit. I knew I had to make them for my brother’s wedding.

Ted handed over the recipe and I was intrigued. It calls for an orange, rind and all, to be pureed in a food processor.

If you enjoy anything orange flavored, you’ll love these cookies. Ted informed me that lemons (or even limes–if you like your cookies tart) can be substituted for oranges in this recipe–just make sure to remove the seeds.

Glazed Orange Cookies
Recipe makes about 6 dozen cookies

Ingredients:
2 cups all-purpose flour
1/2 tsp. baking soda
1 tsp. baking powder
1/4 teaspoon salt
1 cup sugar
1/2 cup butter
2 eggs
1 naval orange, pureed in food processor. Rind and all!

Directions:
1. Preheat oven to 350 degrees Fahrenheit. In a small bowl, whisk flour, baking soda, baking powder, and salt to combine. Set aside.
2. In a large bowl, beat sugar, butter, eggs, and oranges.
3. Add dry mixture to wet ingredients and drop teaspoon-sized dough balls (will be mushy!) onto ungreased cookie sheets.
4. Bake for 10-12 minutes and cool completely. Glaze recipe follows.

Orange Cookie Glaze
Ingredients:
1/3 cup butter
2 cups powdered sugar
1 tsp. grated orange peel
4-8 Tbs. orange juice

Directions:
1. Melt butter over medium-low heat in a saucepan. Stir in orange peel and powdered sugar.
2. Stir in orange juice 1 tablespoon at a time.
3. Stir until smooth and glaze cookies. Enjoy!

Note: Make sure to use a naval orange because it’s seedless.

As of today, that’s how long Jimmy and I have been dating.

I can’t believe God has blessed me with such a caring and wonderful guy. He’s a hard worker. He treats everyone he meets with respect. He loves God. He’s even baked for me (here and here)! What a stud.

In honor of our anniversary, I decided to give him two gifts: a new book and chocolate zucchini muffins.

The “tissue paper” in that bag? It’s definitely a napkin. I didn’t have any tissue paper laying around, so I used a napkin. The zucchini muffins were in that bag…so it worked out just fine 😉
