Rosemary Chicken

Ingredients:
1/4 cup buttermilk
2 tablespoons mustard
8 chicken tenders (or 4 chicken breasts cut in half)
1/3 cup breadcrumbs
1/3 cup chopped walnuts
2 tablespoons grated Parmigiano-Reggiano cheese
3/4 teaspoon minced fresh rosemary
pinch of salt and pepper

Directions:
1. Preheat oven to 425*
2. Combine buttermilk and mustard in a medium sized bowl, stirring with a whisk. Add chicken to buttermilk mixture, turning to coat.
3. Combine breadcrumbs, nuts, and the rest of the ingredients in a food processor and process until evenly mixed and crumbly. Add to a shallow dish.
4. Remove chicken from buttermilk mixture; discard the buttermilk mixture. Dredge the chicken in the breadcrumb mixture.
5. Place breaded chicken in a baking dish coated with cooking spray. Bake at 425* for 13-15 minutes, or until chicken is done. Garnish with rosemary sprigs, if desired. Enjoy!

What’s happening

What’s happening?

Well … it turns out I’m short. Or Hannah is just growing really fast.

Hannah’s on the right, I’m on the left.

Anyways… I just wanted to post about what’s going on in my life lately. I feel like I haven’t done that in forever!

  • Still teaching Spinning, still loving it. I’m currently teaching 3 classes a week at two different branches of local YMCA’s.
  • I’m training for a 5k open water swim (in August), a run-swim-run race (also in August), and a half marathon (in September). It feels good to have some “goals” to train towards.
  • My toe is doing great but I’ve actually been having some other health problems related to digestion. I’ll go into more detail when I know more, but my doctor currently has me on a gluten and lactose free diet. Sad times for this cereal lover.
  • I can’t believe classes start up again next month. I actually forgot what I scheduled..
  • I’ve been cooking and baking (when I feel like it, hehe) a bit and I have a great rosemary chicken recipe to share.

Pictures of what’s happening:

I’ve also been cleaning up after Lola. She got into the garbage on Sunday…

I like to creep on my brother and his fiance when they take pictures.

Teaching Spinning

So yeah, other than the above mentioned things, I’m just enjoying life and feeling really blessed. 🙂
