Keeping up

Hey hey. I just wanted to say that I’m having a hard time keeping up with blogs right now. I feel guilty because I don’t want anyone to think that I’ve been ignoring their blog.

I love reading and commenting on blogs but I have found that my life is pretty busy at the moment with school, friends, family, running, and hopefully a job in the near future. If I haven’t been commenting on your blog, don’t fret because I’m still reading and creeping on your life 😉

This past weekend was quite fun. Hannah and I got our eyebrows waxed. I think it feels good and she hates it with a passion. Also, the lady that waxed my brows asked which local high school I went to and thought Hannah was older than me. I’m six years older than her. Fail. Like our eyebrows?!

I spent Saturday evening at a Mexican restaurant and then a car show in downtown Pittsburgh. Ten people ended up going to the restaurant and car show…. I was the only girl among a bunch of boys. Crazy and fun. Jimmy and I got in trouble for being above the whole car show and taking this picture. Jimmy’s brother and friend thought it would be fun to go to the upper level of the convention center and hang out even though a few signs said not to. We spent about 10 minutes upstairs and then got ushered back down. Ooops 😉

Like I think he fractured his hip…it was crazy.

On a side note, I have been reading this book:The Long Run is about a NYC firefighter who was run over by a bus and made a comeback as an elite athlete. So far, I’m loving it. Such a page turner! I will do a proper review when I finish the book.

Lentil-Spinach Soup

I bought lentils for 79 cents a few weeks ago and finally decided to make something with them! I had some basic soup-making ingredients on hand so I decided to make some soup!

Lentil-Spinach Soup

Ingredients:

-1 tablespoon olive oil

-6 cloves garlic

-1/2 cup chopped celery

-1 cup chopped carrot

-1 cup chopped onion

-8 cups broth (I used vegetarian)

-2 cups dried lentils

-1/2 teaspoon dried oregano

-1/2 teaspoon salt

-1/2 teaspoon black pepper

-1 (10 ounce) package of frozen chopped spinach, thawed

Directions: 

1. In a large stockpot, heat the oil and saute garlic, celery, onions, and carrot until tender. Add the stock and the rinsed lentils.

2. Bring the mixture to a boil, then reduce heat to a simmer. Cover and cook for 45 minutes or until lentils are tender. Stir occasionally.

3. Add the oregano, salt, pepper, and spinach. Simmer uncovered for 15 minutes.

Happy Friday! Today I’m going to probably run on the dreadmill due to the snow in Pittsburgh. Then I have fitness theory and creative writing. Tonight = bowling night!
