Harvesting tomatoes and green peppers

I’m back with another garden update. Our tomatoes and green peppers are growing well and producing a lot! We’ve been having the peppers with hummus, and I’m thinking I need to make fajitas and chili soon.

Does anyone have any other ideas for using up an abundance of green peppers?

As for the tomatoes, I used all but the grape tomatoes to make soup last night. I sautéed a red onion in olive oil and added some freshly chopped basil. In went the chopped tomatoes, seasonings, and chicken broth. It was simple and delicious. I had the soup today with a tuna sandwich and it hit the spot!

I so wish I could have all of my blog friends over for dinner and we could eat the produce from my garden and enjoy each other’s company. I’d make sure to send everyone home with tomatoes, peppers, zucchini and cucumbers.

Our garden is out of control and we’re loving every minute of it! It certainly doesn’t look as neat as it did when we first planted it, but I wouldn’t trade the constant weeding, harvesting, and watering for the world.

So far, Jimmy and I have harvested around 50 cucumbers and zucchini, a few heads of broccoli, and two bunches of swiss chard. Thankfully we’ve been able to share our abundance with friends and family or else we would have a lot of wasted produce.

We’re waiting on our peppers, eggplant, and tomatoes to ripen. We had two grape tomatoes that turned red the other day and they were amazing. I am pumped to cook with eggplant and Jimmy has been checking on the peppers each day because they’re one his favorite foods to dip in hummus.
