Need help!

Hello and Happy Groundhogs Day 2011!

Since I live in PA, I might as well spread some knowledge about Punxsutawney Phil!

On February 2nd, Phil comes out of his burrow on Gobbler’s Knob, in front of thousands of faithful followers from all over the world, to predict the weather for the rest of the winter.

According to legend, if Punxsutawney Phil sees his shadow, there will be six more weeks of winter weather. If he does not see his shadow, there will be an early spring.

The celebration of Groundhog Day began with the Germans, Pennsylvania’s earliest settlers. They brought with them the legend of Candlemas Day, which states “For as the sun shines on Candlemas day, so far will the snow swirl in May…”. The settlers found that groundhogs were plentiful and were the most intelligent and sensible animal to carry on the legend of Candlemas Day.

Punxsutawney held its first Groundhog Day in the 1800’s. The first official trek to Gobbler’s Knob made on February 2nd, 1887. In 2008 it will be the 122nd prediction.

I also wanted to say thanks (again) to everyone. I still feel sick.. but reading all the well wishers is very nice!!

Now onto why I need help:

I plan a weekly dinner menu for my family. Around Wednesday-Saturday I brain storm meals for the next week or look up cool new recipes to try.

Sometimes I make classic dinners like spaghetti & eggplant parm (above) or corn bread fried chicken (below)

Sometimes I go a different route and try an hour long (or even longer..) recipe like:

Portuguese Chicken w/ Chorizo (Spanish sausage)

Now I want to know..

Any recommendations for next week?!

Happy Monday. The last Monday in January 2011. Ground Hogs Day is coming up! Any special plans?

I titled this post “Thank you” because I wanted to express my thanks to everyone who commented on my blog and tweeted me this weekend wishing me and my little sister good luck at our swim meet.

It really means a lot to me 🙂 I ❤ blog friends!!!

Friday night dinner out at Mitchell’s Fish Market at The Waterfront

The scallops were awesome and the pyramid of rice was so good dipped into the gingery-soy sauce. I also had some shrimp for an appetizer.

My friend Catherine and I went ice skating after the swim meet on Saturday. 🙂

Sorry if this post seems a bit random. I feel under the weather today. I think it is because I ate rancid Brazil nuts. . . :/ but I suddenly have a stuffy nose so I doubt it. Do you know of any common cold cures?

I have to work tonight so I will be catching up on everyone’s blog 🙂
