Ingredients
3 cups rolled oats
1/2 cup peanuts, chopped
2 teaspoons ground cinnamon
1/2 teaspoon salt
1/4 cup canola oil
6 tablespoons peanut butter
1/4 cup honey
1/2 teaspoon vanilla extract
Directions
1. Preheat oven to 300 degrees and line two baking sheets with parchment paper.
2. In a large bowl, combine the oats, peanuts, cinnamon, and salt. Stir and set aside.
3. In a medium-sized microwave safe bowl, combine the coconut oil, peanut butter, and honey. Microwave for 30 seconds and whisk to combine. Add the vanilla extract and whisk.
4. Pour the peanut butter mixture over the oats and stir very well, until the oats are completely coated.
5. Spread the granola on the baking sheets and bake for 15 minutes, or until golden brown and no longer wet-looking.
6. Remove granola from the oven and cool on a cooling rack for an hour, or until completely cool.
7. Store in an airtight container for up to two weeks and enjoy!
