It’s almost Thanksgiving and I have the best gift to bring to a host… or to make for yourself 😉
Pumpkin spice granola! It’s filled with that warm pumpkin-y spice, dried cranberries, and is sweetened with just a touch of honey.
Pumpkin Spice Granola
Ingredients
3 cups old fashioned oats
1/2 cup chopped walnuts
1/2 teaspoon salt
2 teaspoons pumpkin pie spice
1/3 cup oil (canola, coconut, vegetable, etc.)
1/3 cup honey
1 teaspoon pumpkin pie spice extract (or vanilla extract if you don’t have pumpkin!)
3/4 cup dried cranberries
Directions
1. Preheat oven to 300 degrees and line two cookie sheets with parchment paper.
2. In a large bowl, combine oats, walnuts, salt, and pumpkin pie spice.
3. In a large measuring cup, combine the oil and honey. Microwave for 35 seconds and whisk in the extract.
4. Pour the wet ingredients over the dry and combine until dry ingredients are completely covered.
5. Divide the granola mixture between the two cookie sheets and spread into an even layer.
6. Bake for 15 minutes. There’s no need to flip the granola, especially if you like big clusters! If the granola isn’t browned after 15 minutes, bake for two more minutes, or until browned to your liking.
7. Once the granola is cooled, top with the dried cranberries and toss into a stoage container. The granola will stay good at room temperature in a sealed bag or storage container for two weeks… if it lasts that long 😉

I like the addition of cranberries in this, I suspect it give just the right pop of acidity to the sweet granola. I can’t wait for Thanksgiving!
