Whole wheat crepes

A crepe is a thin pancake. Crepes are usually filled with sweet (think: yogurt, fruit, whipped cream, nutella) or savory (think: cheese, vegetables, meats) foods.

I like to fill mine with fruit and yogurt and serve it as breakfast for dinner. Or would it be considered dessert for dinner?Whole Wheat Crepes

Ingredients:

1 cup milk

3/4 cup whole wheat flour

2 eggs

1 cup yogurt (any flavor!)

1/3 cup blueberries

2 medium bananas (peeled and sliced)

Directions:

1. Heat greased pan to medium. In blender, blend together milk and eggs until mixed. Add flour, the batter should be thin. Use about 1/4 cup of batter per crepe.

2. Pour batter into pan an immediately swirl the pan to make a thin layer. Cook until top of crepe looks dry-about 1 minute. Place crepes on a plate with a sheet of wax paper in between each crepe.

3. For filling: Set aside a few blueberries and banana slices to top the crepes with. In a medium bowl mix together yogurt, blueberries, and bananas.

4. Fill crepes with about 1/2 cup of filling and garnish with blueberries and banana slices that were set aside.

  1. Woah this is so relevant right now! Your crepes look so good! I just went out for dessert with my friends and my friend had crepes 🙂 mmm blueberries and yoghurt with banana 😉 totally a dinner food anytime 😀
