Sweet & Sour Chicken
1 pound chicken breast
3 teaspoons garlic powder
1/2 teaspoon red pepper flakes
1 bell pepper
1/4 cup ketchup
3 tablespoons spicy brown mustard
1/4 cup apricot jam (you could also use orange marmalade!)
Directions:
1. Chop chicken into bite-sized pieces and season with garlic powder and red pepper flakes.
2. Set a skillet on medium-high heat and spray with cooking spray. Add chicken and cook through, about 8 to 10 minutes.
3. Meanwhile, slice bell peppers and set aside. In a small bowl, mix together ketchup, mustard, and jam. Once the chicken is cooked, add the sauce and the peppers to skillet. Lower heat and continue to cook for 5 minutes to heat through. Enjoy!
