Italian Wedding Soup
1 pound ground chicken, beef, or pork
2 teaspoons dried Italian seasoning
2 egg whites
1/3 cup bread crumbs
2 tablespoons olive oil
1/2 cup diced yellow onion
4 carrots, chopped
4 stalks celery, chopped
salt and pepper to taste
1 teaspoon red pepper flakes
8 cups chicken broth
1 cup acini de pepe
Directions:
1. Prepare meatballs: in a large bowl, combine meat, Italian seasoning, egg, and breadcrumbs. Mix well, then form into about 40 1-inch round balls; set aside.
2. In a large pot, heat oil on medium-high. Add onion, carrots, celery, salt, pepper, and pepper flakes. Saute, stirring occasionally, until vegetables soften, about 2 minutes. Add broth, stir to combine and bring to a boil.
3. Stir in meatballs and pasta. Reduce heat and simmer for 15-20 minutes. Enjoy!
