My life in 30 days, day 22 = a picture of  something you wish you were better at.

I wish I was better at cycling.

I really try to like it and I try to do my best but it just doesn’t work out so well. I was recently in a triathlon and I would have done much better if I had better biking skills! My neighbor let me use his legit bike after the triathlon. You know, the kind where you clip your shoes in. Yeah… I toppled. A lot. It made me mad. But I eventually got used to it. I still wish I was better!!

If I knew more I would be more confident about becoming a cycling instructor. I am seriosuly considering it because I love spin class, so why not teach it? Then I remember… I know nothing about bikes!

Eventually I will take the risk and get certified though 🙂 Either that or become an aerobics instructor, yoga teacher, aqua aerobics instructor, or personal trainer. Very exciting!! Until then, I will dream about being better at biking 😉

Okay time for a lil food post!

What have I been up to in the kitchen?

I made a cheese a veggie wrap with tomato soup just the other day 🙂

Here are some of the contents of the wrap:

Eggplant, mushrooms, tomatoes, onion, peas, green beans, green peppers, and zucchini, spinach, and finally my favorite: CHEESE! (mozzarella to be precise)

All grilled up. Then in my belly in like 5 seconds flat. ❤ It was nice and chewy with half cooked veggies but crispy at the same time because it was grilled. My favorite part is when a big string of cheese hangs from my mouth to the wrap. (Can you tell I ❤ cheese?!)

Friday night I decided to be classic and wake up early to make my grandmothers meatball recipe! With chunky tomato sauce and lots of italian spices. (Such as oregano and basil… also crushed red pepper flakes for some zing!)

Because the tomato sauce cooked ALL day long, the natural sweetness of the tomatoes came out and made it very yummy. The spices balanced out the sweetness so that it wasn’t TOO sweet. It was nice to have chunks of mushroom, tomato, and onion in with the sauce for texture.

Here are the meatballs:

A very plain recipe. 1lb or ground meat (your choice-pork, veal, chicken, beef, turkey, or a combo) with 1/4 cup of bread crumbs, 1Tbs of flour, 1tsp of garlic salt, an one small onion chopped finely. Bake at 350 degrees for 25 minutes! (Makes about 12-15 meat balls depending on the size you prefer).

The dinner was paired with spaghetti and of course a salad. Like I said, classic! Classic food is typically simple and simple is always good. (Mostly?!) The meat balls were so simple that I could actually taste meat and a hint of garlic, very soft as well.

It was a nice Friday night dinner. Tonight I am going to a RV show with my boy and his dad, should be interesting!!

  1. One day you will be AMAZING at cycling!! I know it. 🙂

    I’d like to try a Triathlon one day but so far the only part of it I would do good at is the running. I don’t bike and I don’t swim! Definitely need to work on those.

  2. I wish I was a better (more enthusiastic) athlete in general. I get on my treadmill 4 or 5 times a week but sometimes I wish I could make it a bigger part of my life.
    If you’ve competed in a triathlon, it doesn’t matter how many people pass you. You’re already awesome!

    I was hitting that stuff pretty hard.
