Hawaiian Chicken

I have to share this recipe for Hawaiian chicken. I adapted it from a Taste of Home recipe and tweaked a few things to work with what I had on hand at the time. My sister and I made this together for Jimmy and her boyfriend and we all loved it.

I think the sauce is what makes it. Pineapple, onions, honey, ketchup, and cider vinegar are thickened and coat the chicken perfectly. This dish is especially delicious when served over rice!

Hawaiian Chicken

Hawaiian Chicken

1 lb chicken breast, cut into 1-inch pieces
2 tablespoons olive oil
1/2 cup onion, sliced into thin strips
1 can (14.5 ounces) beef broth
1 can (8 ounces) pineapple chunks, undrained
1/4 cup ketchup
1 tablespoon honey
1 tablespoon apple cider vinegar
2 tablespoons cornstarch
3 tablespoons cold water

1. Heat olive oil on medium heat in a large sized skillet and cook until browned. Remove and keep warm.
2. In the same skillet, sauté onion until tender. Stir in broth, ketchup, pineapple, honey, and vinegar. Bring to a boil, reduce heat and simmer for 10 minutes.
3. Combine the cornstarch and water and whisk until smooth. Stir into skillet and bring to a boil. Cook until thickened, about 2 minutes. Serve over your favorite rice and enjoy.

Hannah Graduated!

Well, she did it. My baby sister graduated from high school and I couldn’t be more proud of her. She graduated with honors, holding a cumulative GPA of 4.25.

She was class president, a member of the National Honor Society, won the school’s science award, and was the outstanding student of the year.

The graduation ceremony was incredibly special. Because there were 29 kids in Hannah’s graduating class, the ceremony was very personalized and just beautiful.
