Last night was meatloaf night! I love meatloaf with a bunch of ketchup. It is such a classic American dish. I decided to add mushrooms and spinach to make it MOIST.
Mini Meatloaves
Ingredients:
Cooking spray
1 cup chopped onion
1/2 cup chopped mushrooms
1 cup fresh spinach
1 Tbs dried parsley
2 tsp. dried oregano
1 Tbs Worcestershire sauce
1/2 tsp each of salt & pepper
1 Lb of ground meat (your choice!)
1 large egg
1/3 cup ketchup
1 tsp. hot sauce
Directions: Saute onions, mushrooms, and spinach until lightly browned and cooked through, about 5 minutes.
Combine the next 8 ingredients (through the egg) in a large bowl.


Spray a 12 cup muffin tin with cooking spray and put a half cup of the meatloaf mixture into each cup.
Mix the ketchup and hot sauce and brush onto the mini loaves

Ignore Allie’s messy kitchen and bake loaves for 30 minutes at 350 degrees. Make some veggies and French fries.

My parents used to make meatloaf and I was never a fan until this year. Maybe I should make some for them and turn the tables ha.
I love making ostrich meatloaf with LOTS of ketcup. Its so good. Sometimes I spice it up and add in pineapple and tangy BBQ sauce. Love the mini meatloaves.
