Ingredients
3 cups (375g) all-purpose flour
2/3 cup (135g) sugar
3 teaspoons baking powder
1 teaspoon salt
1 teaspoon baking soda
1 cup (150g) raisins
2 eggs, beaten
1-1/2 cups (360ml) buttermilk
1 tablespoon (15ml) canola oil
Directions
1. Preheat oven to 350 and grease a 9-inch round baking pan.
2. In a large bowl, mix the first five ingredients. Stir in the raisins.
3. Set aside 1 tablespoon beaten egg. In a medium bowl, combine the buttermilk, oil and remaining eggs; stir into the flour mixture just until moistened (dough will be sticky).
4. Transfer to baking pan and brush the top with reserved egg.
5. Bake 45-50 minutes or until a toothpick inserted near the center comes out clean. Cool 10 minutes before removing from pan to a wire rack to cool. Cut into wedges and enjoy!
