3 cups (240g) rolled oats (also called “old fashioned oats”)
1/2 cup (70g) salted peanuts, chopped
2 teaspoons (5g) cinnamon
1/2 teaspoon (3g) salt
1 ripe banana (115g), mashed
1/4 cup (60g) coconut oil, melted
6 tablespoons (96g) creamy peanut butter
1/3 cup (113g) honey
1 teaspoon (5ml) vanilla extract
1 cup (100g) dried banana chips

Directions
1. Preheat oven to 300 degrees and line two baking sheets with parchment paper.
2. In a large bowl, stir together oats, peanuts, cinnamon, and salt. Set aside.
3. In a medium-sized microwavable bowl, combine banana, coconut oil, peanut butter, and honey. Microwave for 30 seconds and whisk in vanilla extract. Whisk until smooth.
4. Add the wet ingredients to the dry and stir until the mixture is completely coated.
5. Spread evenly between the baking sheets and bake for 20-25 minutes, or until golden and crunchy.
6. Cool on baking sheets for an hour and add in the dried banana chips. Store in a sealed container for up to two weeks at room temperature. Enjoy!
