Chocolate Cherry Granola Recipe

Ingredients
3 cups (240g) rolled oats
1 cup (92g) sliced almonds
1/2 teaspoon salt
1/3 cup (75g) coconut oil
1/3 cup (113g) honey
3 tablespoons (21g) cocoa powder
1 teaspoon cherry emulsion (can sub vanilla extract)
1 cup (130g) dried cherries

Directions
1. Preheat oven to 300 degrees and line two baking sheets with parchment paper.
2. In a large bowl, combine oats, almonds, and salt. Set aside.
3. In a medium-sized microwavable bowl, add coconut oil and honey. Microwave for 35 seconds and whisk in the cocoa powder and cherry emulsion.
4. Add the wet ingredients to the dry and mix until the oats are completely coated.
5. Spread the granola mixture onto the baking sheets and bake for 15 minutes. If the granola is still wet-looking, cook for 2-3 more minutes.
6. Cool on the pans for an hour and add the dried cherries. Toss to combine and enjoy! This will stay fresh for 2 to 3 weeks when stored at room temperature in an airtight container.
